When the temperature hits 15 degrees here in the West Highlands, summer is pretty much on! Tarpaulins get pulled off the BBQ with vigour, the algae coated paddling pool gets a well deserved scrub down, and all you seem to want to do is sit in the back garden sipping cocktails (or maybe that’s just us!).
This is exactly what happened this week. It was a balmy 16 degrees here in Morar. So, if you haven’t already been indulging in the tropical spirit, now’s your chance. We’ve picked our favourite rum based cocktails to help shake up your summer.
Citrus Daiquiri
- 50ml Grey Dog White Rum
- Juice of 1 lime
- Juice of 1/2 grapefruit
- 1 lemon wedge
- 2 teaspoons sugar
- 15ml sugar syrup
- 1 cup ice cubes
Directions: Wipe the rim of a chilled cocktail glass with a lemon wedge then dip into sugar to rim the glass. Next add all liquid ingredients into a cocktail shaker with ice. Shake well and strain into the cocktail glass. Garnish with a lemon swirl and serve.
Mojito
- 50ml Grey Dog White Rum
- 10 fresh mint leaves
- 1/2 medium lime
- 2 tablespoons sugar syrup
- 1 cup ice cubes
- 75ml sparkling water
Directions: Put the mint leaves into a glass and squeeze the lime juice over them. Add the sugar syrup and then muddle the mint, lime juice and sugar together. Add crushed ice. Stir in some Grey Dog white rum and top with sparkling water. Garnish with mint, a twist of lime and serve.
Pina Colada
- 50ml Grey Dog White Rum
- 1 cup ice cubes
- 75ml pineapple juice
- 50ml coconut milk
- fresh pineapple
Directions: Shake the Grey Dog white rum, pineapple juice and coconut milk together and strain into a glass. Garnish with a pineapple wedge to serve.
Dark & Stormy
- 50ml Grey Dog Golden Rum
- fresh lime juice, plus a wedge to serve
- 2 dashes of Angostura Bitters
- 5ml sugar syrup
- 100ml chilled ginger beer (the fierier the better!)
- 1 cup ice cubes
Directions: Put all the ingredients in a glass over lots of ice, stir gently and garnish with a wedge of lime.
